The exquisite dinner showcases sustainably raised and expertly prepared barramundi from Humpty Doo farm in the Northern Territory, kingfish from Clean Seas in Spencer Gulf, South Australia, and Murray cod from Aquna, a premium sustainable pond-grown Murray cod farm in the Riverina, New South Wales. However, the commitment to top-tier Australian produce doesn’t stop here. The menu also features locally sourced bread from PiOik Bakery, known for its organic, handmade creations, and Pepe Saya’s rich, batch-churned butter complete the experience, making every bite a true indulgence.
Chef Sven Ullrich has been a key figure in Hyatt Hotels since 2000, and has ensured his commitment to supporting local is a hallmark of his culinary approach. As Executive Chef, he oversees an impressive culinary operation, including three full-sized commercial kitchens, five food and beverage outlets, and over 4,000 sqm of event space.
